- 1 1/2 cups unsweetened coconut water
- 1.2 tbsp approximately 20 g chia seeds
- 1/2 tsp fresh lemon juice
- Optional additions:
- Lime juice instead of lemon
- A splash of fruit juice e.g., cranberry, pineapple, orange
- A pinch of ground ginger or turmeric
- 1 teaspoon raw honey or maple syrup
Combine: Pour 1 1/2 cups of coconut water into a glass jar or bottle with a lid. Add the 1.2 tablespoons of chia seeds directly into the coconut water.
Initial Stir & Rest: Give the mixture a really good stir for about 30 seconds to prevent clumps, making sure the chia seeds are separated. Let it rest for about 5 minutes.
Second Stir & Chill: After 5 minutes, give it another vigorous stir to ensure even hydration. Cover your container and pop it into the refrigerator to rest overnight.
Morning Prep: The next morning, pull your container from the fridge. Give it another good stir to re-distribute any settled seeds.
Add Lemon & Enjoy: Now, add your 1/2 teaspoon of fresh lemon juice. Stir it in one last time. You can drink it immediately, or pour it into a travel mug.

- Store the mixture in a tightly sealed container in the refrigerator for up to 3 days.
- While you can soak them longer, the texture might become too thick, and freshness may diminish.
